Jinpachi

Jinpachi was opened in 2006 by master chef Hirotaka “Taka” Fujita. 5 generations of sushi knowledge combined with stints at Nishimura, Nobu Malibu, and Takao have culminated in the opening of his own restaurant where the focus is on the highest quality ingredients available. Pastry chef Tomo turns out ornamental desserts that combine French and Japanese influences. Classic and neoclassic sushi and sashimi is artistically presented over the rich cherry wood counter in a minimalist setting.

I've been to Jinpachi twice in the passed two weeks, and both times I experienced truly amazing sushi.
The first time, we sat at the bar, and I ordered the omakase. The second, I had my omakase upstairs, since we had a large party of ten.
Sitting at the bar was truly the better sushi experience. Taka-san touched every piece of sushi I ate, and each piece was a marvel in its taste, freshness and simplicity. Even though wasabi and soy was available for the nigiri and sashimi, it was never used. Each piece that was served was seasoned slightly with different light sauces, and adding additional soy and wasable seemed like a crime.
From the three Kumamoto oysters(each prepared a different way) to the gorgeous seared toro, this was a meal to be remembered. The only downside was the absence of the pastry chef, or Taka-san's wife. We made up for it,though, with of couple of glasses of Jyuyondai...arguably the best sake I've ever had.
The price is steep, but Jinpachi is a must for all searching for the perfect sushi meal.

Transcendent dining experience

Sit with Taka-san at the bar, order the omakase and enjoy. Jinpachi focuses of top flight seafood selections and presents them with minimal creative twists to keep things intriguing. The assorted desert tray is a nice finale to the trip.

I have been going to Jinpachi since it opened. The staff is attentive and the sushi is always fresh n' fabulous. The owner's wife is the pastry chef and she seriously rocks.
